Carolina Jantac, MS, RD, LD is a registered dietitian nutritionist who has applied her skills and knowledge helping people of all ages, from neonates to elderly. She started her career in clinical nutrition in an adult hospital where she counseled patients (in English, Portuguese and Spanish) in a variety of areas including diabetes, heart disease, renal nutrition, weight management and post traumatic event recovery. After a few years she moved to a new setting in long term care and served as a Nutrition and Food Service Manager for a facility with residents ranging from assisted living to long term patients. Carolina found herself in a new challenge when her path took her to All Children’s Hospital where she started as a Cardiovascular Intensive Care Dietitian and was later trained to cover all areas of pediatric care including neonatal nutrition.
Carolina is an honors graduate from University of Florida where she received her Bachelor of Science degree with a major in Food Science and Human Nutrition and a minor in business administration. She also received her masters degree at University of Florida in 2004 where her studies had a research focus in specific on Vitamin B6, at the end of her masters she published her finding ins the Journal of Nutrition and Metabolism in 2007. During her combined program to acquire her registration as a dietitian she completed her internship in several areas including pediatric and sports nutrition specialties with the University of Florida Athletic Department.
Carolina has accumulated years of experience in nutritional counseling in both private and clinical institution including including several areas such as weight management, allergies, digestive issues, infant nutrition, sports nutrition, pediatrics and adults. She is currently a recipe developer and social media blogger for Once Again Nut Butters where she contributes with recipes, tips and other nutrition related articles. She is the host of the Family Food Kitchen show on RadioMD which airs on Thursdays at 11am ET and discusses trending topics in Nutrition with a variety of guests and experts in the field of medical and nutritional sciences.
She is a public speaker and educator, she was the spokesperson for a non-profit foundation focused on nutritional education programs in after school programs for elementary aged children. She is passionate about children’s education in health and nutrition so they are better equipped to make choices that lead to a healthier and longer life.
Carolina currently resides in Tampa Bay Area, Florida, with her husband, Jason, and her children Isabela and Daniel. Carolina has a dual citizenship, Brazilian and American, she speaks Portuguese, Spanish, English and is currently learning Italian!
